How to prepare Garlic Mustard

It's May and a perfect time to go out there and harvest some wild Garlic Mustard greens and make two yummy recipes - pesto and pasta sauce.

Garlic Mustard Pesto

1 1/2 cups garlic mustard greens (leaves)
1 cup cashews, soaked
1 cup fresh parsley
1 cup green olives
1/2 cup olive brine
1 tsp fresh lemon zest
2 Tbsp fresh lemon juice (from about 1/2 lemon)
1 tsp miso paste (or use some salt instead)

Garlic Mustard Pasta Sauce

2 cups garlic mustard leaves and top part of young stems
1/2 cup vegan feta (or use silken tofu with added onion powder, garlic powder, salt)
1/4 cup unsweetened plant milk
Salt & pepper to taste
