Best Vegan Lasagne - simple and oil free

This is us such a simple and tasty Vegan Lasagne recipe, the best part is that you can experiment adding different veggies for the layers, like butternut squash or sweet potato, you can add some kidney beans with the mushrooms - let you imagination and creativity guide you!

Vegan Lasagne

Use whole wheat lasagne sheets, you will need about ½ pack.

Tomato/mince layer:
200 g mushrooms (chestnut, oyster, shiitaki), sliced and fried
200g homemade seitan (or use more mushrooms)
2 x 400g tins of chopped tomatoes (if not using seitan, 1 tin might be enough)
1 Tbsp red or brown miso paste (or use yeast extract if you’re allergic to soy)
1 Tbsp soy sauce

Green vegetable layer:
2 celery sticks, sliced thin and fried
1 small leek, sliced and fried
1 medium courgette, halved, sliced thin and fried
½ cup vegetable stock

Orange layer:
1 large onion, diced and fried
3 large carrots, grated and fried
2 Tbsp tomato paste (or use ketchup)
1 Tbsp miso paste
½ cup vegetable stock

White Sauce:
1 medium cauliflower, steamed (or use sweet potato for an orange and sweeter sauce - it's actually my preference!)
200g firm tofu
4 Tbsp nutritional yeast flakes
3 garlic cloves, crushed
1-2 Tbsp white wine vinegar or apple cider vinegar
½ tsp salt or vegan stock powder
1 cup soy milk (or any other plant milk)

Bake at 200 degrees Celcius for 30-40 minutes.
