Chicken Curry (English) - real home style Punjabi Chicken Curry - At Home with Reena

Prep Time: 20 mins
Cook Time: 90 mins

1 serving = 2 drumsticks 43g of protein

Ingredients:
3 lbs of chicken
4-5 tbs of Olive Oil
1 tsp of cumin seeds
3/4 large onion diced
4 inch diced piece of ginger root
12-14 diced garlic gloves
4 green onions diced
3 diced serrano chili
1 tsp of masala
1 tsp of haldi (turmeric)
2 tsp of paprika
1 tsp of red chili powder
3 tsp of salt
3 cups of water
1/2 cup of diced cilantro

Method:

1. Add 4-5 table spoons of olive oil to you pot on medium heat.
2. Add 1 teaspoon of cumin and toast for about 1 minuet before adding your onion.
3. Add your onion and saute for about 8 mins
4. Then add 1 tsp of salt to assist in the sweating of the onion. We want all the fluid out to create a nice broth for 8-10 min
5. Add your ginger and garlic and saute for another 8 -10 minutes
6. Add 3 diced green serrano chilis & 4 diced green onions. Saute for 5 mins
7. At the same time
- 1 tsp of masala,
- 1 tsp of haldi (turmeric)
- 2 tsp of paprika
- 1 tsp of red chili powder -
- 2 tsp of salt.
Saute all your spices for 2 minutes stirring rapidly.

8. Add 1 cup of tomato sauce and reduce down for 2 minutes.

9. Add 1 pureed tomato and reduce this for 2-3 minutes.

** This next step is optional but you really want a smooth broth you can use a hand blender to further blend down the sauce. But be careful to not splatter it everywhere like you eye. Like I did! Wasn’t that fun!

10. Add your chicken a few pieces at a time and coat with the thurka/base. Cook for 20 mins

Continue until all your pieces are incorporated. This is important you could add water immediately BUT we want to flavor to be infused into the chicken so that’s why we are going to cook it for 20 minuets. Constantly turning it and folding the chicken from the bottom to the top.

11. Add 3 cups of water & add ¼ to ½ cup of cilantro.
12. Cover with lid, put heat on low medium heat and bring to a boil. apprx 45 mins - 1 hr

** But if you have to boil it fast 30 mins on medium heat should do.

Tips:
We are going to use 4 chicken legs, 2 chicken thighs and 1 chicken breast.
A tip in removing chicken skin from the drumstick to use a paper towel to grip the skin and pull away.
