Easy Homemade Paneer (English) / Indian Cheese - At Home with Reena

Ingredients:
- 8 cups of milk or 1/2 gallon of milk
- 1/4 cup white distilled vinegar
- cheese cloth

Method:
1. On medium heat bring 8 cups or ½ a gallon of milk to boil.

2. Once your milk has boiled go a head and turn off the heat and add ¼ cup of white vinegar.
- You will notice a curdling effect immediately.
- If you don’t go ahead and take a whisk and give it a gentle stir.

3. Using a fine mesh sieve drain your milk and vinegar allowing for the vinegar and liquid to drain through catching your loose paneer.

4. Rinse using luke warm water. We want to flush out the excess vinegar.

5. Then fold your cheese cloth into four layers. You want it be folded enough so that you don’t loose the paneer but easy enough for the excess water to drain out.

6. Add your paneer to the center of your cheese cloth and bring the edges to the top and prepare to twist the paneer at the bottom to force all the excess water out.

7. Press down on the paneer to get the desired height you want and try your best to get it into the shape you desire.

8. Fold up the sides.
- This will create a dense packaging of the paneer allowing us to cut firm slices at the end of the process.
- Pull the fabric taught and continue to fold over 4 times.

9. Place another flat plate on top of the folded up paneer and place a heavy object ontop.

10. Leave for about 1 hr. You can also make this day before.

11. After your Paneer is firm remove the heavy weight and start to carefully unfold the layers of cloth.

12. Transfer to a plate and cut small cubes.
