Pizza Cast Iron Pan - At Home with Reena

Ingredients:
Dough:
3 cups of Tipo 00 flour
1/2 cup of water temp 110° to 115°
1 tbsp of sugar
1 1/2 cups of water
7 grams dry active yeast

Toppings:
4 tbsp marinara sauce
1/2 cup shredded mozzarella cheese
Toppings of choice.

Method:

1. In a medium size bowl add 1 package of active dry yeast.
2. Add Tablespoon of sugar and ¼ cup 110° to 115° temperature water.
3. Stir and dissolve all the ingredients and set aside for 10 minutes to let yeast to activate. You’ll know that your yeast is ready when you see little bubbles forming.
4. measure 1 ½ cups of water & 3 cups of Tipo 00 flour.
5. Go a head and start to add flour and water to make the dough. Add a little water and then flour and continue to mix until all your flour is incorporated.
6. Once you have all the flour and water mixed together let’s move onto a floured surface and knead the dough.

7. To help the dough rise a little trick is to turn on the oven for a few minutes get it nice and toasty and turn it off.
8. Then take your bowl you mixed your flour in clean it and coat it with olive oil.
9. Add your dough to the bowl cover with a damp towel and put it in the warm oven for 20 minutes. Your dough should double in size.

**While your dough is rising go a head and cut all your ingredients. If you are going to do any meat or sausage cook it before adding it as a topping.

10. Once your dough has risen, transfer it to a floured surface and cut your dough into 4 pieces.
11. Take 1 qtr of the dough and fold the edges under creating a dome. Keep turning and folding the edges under until you have a round shape
11. Cover and let it sit for another 15-20 mins.
12. While the dough is rising again…turn on the oven to 500 degrees.
13. While your oven is heating up to 500 degrees go ahead and put empty pan in the oven.

14. Take 1 of your pizza disc and place it on a floured surface and start to shape your pizza crust. Just use finger tips to push out the pizza’s shape.

15. Once you pizza dough is in the desired shape and size. Place it carefully on your pan. Remember the pan is hot so be very careful.

-Add 2-3 spoonfuls of marinara sauce and spread it evenly.
-Add your desired amount of cheese.
-then proceed to add your toppings of choice.

16. Once you are done with the toppings pop it into the oven for 7-10 minutes. Place the pan deep into the oven. So that the heat from the back of the oven helps in cooking the pizza.

Remove the pizza and place on a heat safe surface and use tongs to remove the pizza from the pan. Cut into your desired pieces and enjoy… Maybe let it cool before eating it…but its just so delicious its hard to resist.
