Kadhi / Kardie in English (chickpea flour soup) - At Home With Reena

Ingredients:
½ cup tomato sauce
1 tsp haldi (tumeric)
½ tsp masala
½ tsp Red chili
1 tsp salt
3 tbs besan (chickpea flour)
1 cup plain yogurt
2.5 cups water
3 green onions
¼ large onion
2 diced garlic gloves
1 inch grated ginger
¾ cup diced cilantro

Method:
In Medium pot add 3 tbl spoons of olive oil.
- add ¼ tsp of cumin until lightly toasted
- add 2 diced garlic cloves
- with 1 inch finely graded ginger.

Wait until you can smell the aroma of ginger and garlic and add you ¼ large diced onion with your 1 diced green chili. Sautée until the onion is translucent.

While your onions are sauting make our besan mix.
- Add 1 cup of yogurt and add 2/5 cups of water. Blend until smooth
- Then add 3 tbs of besan and mix until there are no lumps. Set aside for later.

Add your 3 diced green onions

Now we need to cook the masala and other spices.
- Add 1 tsp of haldi/turmeric
- Add ½ tsp of red chili
- Add ½ tsp of masala
- Add 1 tsp of salt ( remember you can always add more salt at the end.

Stir for 1 minute.

Add your ½ cup of tomatoe sauce. Cook down the sauce for 3 minutes.

Add your besan, yogurt, water mix

Add your cilantro and stir frequently until it starts to boil. Once it has boiled go ahead and put it on medium low heat.

You might notice that your kadhi’s consitancy is very thin. Don’t worry as it cooks down it will thicken.

A few learned lessons:

1. If you added too much Besan and the constancy is very thick… boil water and add it to your Kadhi.
2. If you end up having left overs… When you reheat add water and stir the lumps out of it.
3. If the kadhi doesn’t have that sour taste to it…You can add more Yogurt& water …just mix 2 to 1 ratio of yogurt to water. If you add 1 cups of yogurt add ½ cup of water. Mix your yogurt and water together before adding it to your Kadhi
4. If the next time you want to make it more sour. Leave your yogurt out overnight.
