Spinach Avocado Roti (English) - At Home with Reena

Ingredients:
1 cup of atta Flour
1 cup of Spinach
¼ of avocado
1 garlic glove
1 inch piece of ginger
a little salt & pepper for taste
Method
Prep the dough, start by blending the spinach and avocado to a puree.
Put 1 cup of spinach in your blender with a ¼ piece of avocado. Then add your garlic and ginger into the blender.
Add a little less than ½ cup of water. Blend until everything is pureed and you have yogurt like consistency.

Slowly add the spinach and avocado mixture together kneading the dough.
To know that your dough is ready you should have a play dough like consistency. If you need to you can make the dough a head of time and store in an air tight container for later use.
Prepare your station to roll out the dough.
You’ll need:
A floured surface
A rolling pin
A small bowl with atta flour
Before you start rolling out your spinach avocado roti, you will need to get our your cast iron pan and get the heat to radiate about 2-3 inches from the surface.
Start by getting a golfball size ball of dough and kneading it between your palms. The roll in flour and then flatten the dough making it into a thick disk.
Then place on your floured surface and roll out using a rolling pin.
Once your pan is hot enough, but not too hot place your Spinach Avocado roti on the pan. Leave it there for 10-15 seconds or when you see the roti texture change. Then flip and pat down the edges to make sure the edges get cooked. Leave here for about 75 seconds. A little longer than you would a typical roti.
Then flip and push down on the roti to help the steam pockets form cooking from the inside.
Once you can see the brown spots on both sides use butter on one side and transfer to a plate.
You should be able to make 6 Spinach Avocado Roti
