Red Bean Sweet Potato Pancake Recipe (蕃薯豆沙軟餅) with Papa Fung

A traditional warm, soft and chewy snack with a nice little crunch from the sesame. The sweet potatoes pancake combined with red bean filling strikes a nice balance where it’s not overly sweet.

RED BEAN SWEET POTATO RECIPE [蕃薯豆沙軟餅食譜 ]
This recipe makes 22 sweet potato pancakes [製成二十二塊]

INGREDIENTS [食材]
200g Glutinous Rice Flour [糯米粉]
60g Sugar [糖]
100ml Hot Water [熱水]
800g Sweet Potato [蕃薯]
Some White Sesame [白芝麻]
500g Red Bean Paste [豆沙饀]

DIRECTIONS [製作]
1. Grab red bean paste, roll into balls, set aside in fridge. [豆沙饀平均分細粒，搓圆球形状，放入雪柜備用。]
2. Peel sweet potatoes and slice them. [蕃薯去皮切片。]
3. Steam sweet potato slices until cooked in medium heat (around 20 minutes). [中火蒸約二十分鐘至熟。]
4. Mash sweet potatoes until it is a smooth paste. Add in sugar, mix until combined. Pour in hot water, continue mixing until combined. Add in glutinous rice flour, mix until dough-like. [取出壓成蓉，加糖拌匀，加入熱水再拌匀，倒入糯米粉拌匀成麵糰。]
5. Take it out, knead until smooth. [取出搓揉成幼滑麵糰。]
6. Divide it into even pieces, make sure it’s the same number as red bean balls. [平均分成小粒和豆沙饀同等数量。]
7. Roll the sweet potato dough into a ball, flatten it, place red bean ball in the middle and wrap it up. Flatten it into a pancake-shape. [搓圓壓扁包入饀料在中間，掐實收口，略壓成軟餅狀。]
8. Dunk the pancake in a pan of water, and roll it in sesame seeds, so it is covered. [浸入水中，再蘸芝麻備用。]
9. Heat up a frying pan, pan-fry medium heat until both sides are golden brown. Serve. [熱煎鍋中火煎至两面金黄即可享用。]
