Seafood Lucky Pouch Recipe (海鮮福袋) with Papa Fung

SEAFOOD LUCKY POUCH RECIPE [海鮮福袋食譜]
This recipe makes 17 lucky pouches. [製成十七隻]
INGREDIENTS [食材]
Filling [饀]
250g Shrimp [蝦]
130g Scallop [带子]
100g Crab Meat [蟹肉]
5 Water Chestnut [馬蹄]
3tbsp Roe [魚子]
2 Stalks Green Onion [青葱]
6g Sugar [糖]
4g Salt (2g Season Shrimp, 2g for Filling) [鹽]
Some White Pepper [胡椒粉]
Some Sesame Oil [麻油]
Wrapper [皮]
200g All-purpose Flour [中筋麵粉]
50ml Water [水]
1 Egg [蛋]
DIRECTIONS [製作]
Filling: [餡]
1. Marinate shrimp with some salt and potato starch, let it sit for 10 minutes. Wash it clean, dry off with paper towel. Slice into smaller pieces [蝦用生粉和鹽抓匀,腌十分鐘,冲洗乾浄印乾切碎備用。]
2. Wash scallops, pat dry, dice into small pieces [带子洗淨印乾切碎。]
3. Remove skin from water chestnut, wash it, dice into small pieces [馬蹄去皮洗浄切碎。]
4. Slice green onion into long thin strips [青葱鎅成長條。]
5. Season shrimp with 2g salt, white pepper, mix and then slam until sticky. Let it marinate for 10 minutes. Add in scallop, crab meat, water chestnut and season with 2g salt, sugar, white pepper, mix, add sesame oil, mix, set aside in fridge. [蝦落適量鹽和胡椒粉抓匀略撻至起膠腌十分鐘,混合所有材料和調味料撤底拌匀,最後混合麻油,放置在雪柜內二十分鐘。]
Wrapper [皮]
1. Sift all-purpose flour onto table top. Create a well, add an egg, and in water in a few separate pours. Mix, slowly incorporate the flour in, knead until dough-like. Wrap it, up and let it sit for 1 hour. [篩粉開穴中間加蛋和少許水,先抓匀撥入麵粉,搓揉如覺乾遂少加水,搓成麵糰好静置一小時。]
2. Divide dough into even pieces, roll it into discs, set aside. [平均分成小粒擀成碟狀備用。]
Assembly: [组合]
1. Blanch green onion strips set aside. [青葱用熱水灼軟。]
2. Place filling in the middle of the disc, scrunch up all the outer edges together, use a green onion strip, tie the end to seal it shut. [將餡料包入麵皮中間,用葱索口。]
3. Steam for 6 minutes and sprinkle on some roe , serve. [水滚計蒸六分鐘,取出灑上鱼子即可。]
