Black Sesame Lava Glutinous Rice Balls in Sweet Peanut Dessert Soup Recipe (流芯湯圓花生糊) with Papa Fung

BLACK SESAME LAVA GLUTINOUS RICE BALLS IN SWEET PEANUT CREAM DESSERT SOUP RECIPE [流芯湯圓花生糊食譜]
This recipe makes 36 tong yuen and peanut soup that serves 6-8 people. [製成三十六粒湯圓和六至八人份糖水]

INGREDIENTS [食材]
Glutinous Rice Balls [湯圓]
Filling [餡]
270g Black Sesame [黑芝麻]
230g Vegetable Shortening [人造菜油]
100g Sugar [糖]

Wrapper [皮]
400g Glutinous Rice Flour [糯米粉]
80g Sugar [糖]
320ml Hot Water [熱水]

Peanut Dessert Soup [花生糊]
250g Peanuts [花生]
800ml (400ml to grind peanuts, 400ml to cook) Water [水 (總數800ml分二份)]
110g Cane Sugar [片糖]
100ml Evaporated Milk [淡奶]
1tbsp Rice Flour [粘米粉]

DIRECTIONS [製作]
Glutinous Rice Balls
Filling [餡]
1. Roast sesame until fragrant (around 10 minutes), set aside to cool. [白鑊炒熟和香芝麻(約十分鐘)待涼。]
2. Grind sesame seeds until powder-like texture, set aside. [涼透後攪成粉狀待用。]
3. Combine sesame powder with sugar, add in melted vegetable shortening. Mix, pour it into a baking pan (lined with saran wrap). Wrap and set aside in freezer for 1 hour. [芝麻粉混合糖,加入已溶人造菜油,放入已舖上保鮮膜的盆內,撥平再在面鋪上保鮮膜放置在冰柜一小時。]
4. Once sesame mixture has solidified, cut into squares, shape squares into balls, set aside in freezer. [待雪硬取出平均切成小塊,再搓成小球狀放回冰柜。]

Wrapper [皮]
1. Melt sugar in hot water, then combine sugar water with glutinous rice flour. Knead until dough-like, set aside in a bowl with a wet paper towel covering it. Let it rest until dough is completely cooled down. [煮熱水溶糖,將熱糖水倒入糯米粉內快手攪拌,取出搓揉成麵糰,用濕紙巾覆蓋免乾,直至涼透。]
2. Separate dough into same number of pieces as filling balls. [取得麵糰分成平均小粒。]

Assembly [組合]
1. Place sesame ball into flattened dough piece. Wrap dough around sesame, shape into balls, set aside in fridge. [取小麵球壓扁包入餡料,搓成球形放回雪柜待用。]

Peanut Dessert Soup [花生糊]
1. Roast peanuts until fragrant (around 10 minutes), set aside to cool. [白鑊炒熟和香花生(約十分鐘)取出待。]
2. Place peanuts into mixer to grind into smaller pieces. Place 400ml of water, continue grinding until it is like a smoothie consistency. [將花生放入攪拌機內先打碎再加適量水攪成糊狀,再加水攪至綿滑。]
3. Pour peanut smoothie into pot, add in remaining 400ml of water, cook and continuously stir. Add in crushed cane sugar. Continue cooking until all the sugar has melted, and make sure to constantly stir. [將花生糊倒入鍋中,加入餘下的水煮熱加糖(糖先拍碎)途中要不停攪拌免黏。]
4. Meanwhile, make a slurry by combining rice flour and some water. [同時粘米粉用的少許水開成粉漿備用。]
5. Pour in evaporated milk into peanut smoothie, continue cooking and mixing. Lastly add in slurry, keep cooking it slightly thickens and remove from heat. [倒淡奶入糊內煮熱,要不停攪拌,最後加粉漿煮至杰身,即成香滑甜美花生糊。]

Final Assembly [組合]
1. Boil some water, toss in some rice balls, cook until they float, remove from heat. [煲滾一鍋水,放入湯圓直至浮起即熟,離火。]
2. Place rice balls in bowl, pour in some peanut dessert soup, serve. [將湯圓放碗中,加入花生糊即可亨用。 ]
