Hong Kong Style Coconut Tart Recipe (椰撻) with Papa Fung

Flaky, light and butter puff pastry tart filled with sweet and sticky coconut filling. If you’re a fan of coconut, this traditional tart is a must try!

COCONUT TART RECIPE [椰撻食譜 ]
This recipe makes 18 coconut tarts [製成十八隻]

INGREDIENTS [食材]
Water Dough [水皮]
180g Pastry Flour [低筋麵粉]
80g All-Purpose Flour [中筋麵粉]
40g Lard [人造猪油]
40g Sugar [糖]
1 Egg [蛋]
100ml Water [水]

Oil Dough [油皮]
180g Pastry Flour [低筋麵粉]
170g Lard [人造猪油]

Coconut Filling [椰丝饀]
150g Shredded Coconut [椰丝]
20g Custard Powder [吉士粉]
40g Pastry Flour [低筋麵粉]
110g Sugar [糖]
80g Unsalted Butter [牛油]
3g Baking Powder [發粉]
140ml Milk [牛奶]
2 Eggs [蛋]

Directions [製作]
Tart [撻]
Water Dough [水皮]
1. Combine pastry flour and all purpose flour, sift. Create a well, add sugar and egg, mix, add water, mix and knead until a dough has formed. Add in lard, knead until smooth. Wrap, set aside in fridge for 1 hour. [混合粉料過篩,開穴加糖在中間,加蛋抓匀加水拌匀,撥入粉料搓揉,再加上人造猪油搓匀,搓撻成麵糰包好放在雪柜一小時。]

Oil Dough [油皮]
1. Sift pastry flour, add lard, knead into a dough. Wrap, set aside in fridge for 1 hour. [麵粉過篩加入人造豬油搓壓成麵糰,包好放入雪柜一小時。]

Assembly [組合撻皮]
1. Flatten water dough [取水皮擀薄]
2. Flatten oil dough [同時擀薄油皮]
3. Place oil dough on top water dough, fold in thirds, flatten, fold into fourths, flatten, fold into fourths again, flatten. [將油皮放在水皮上,摺三摺,擀薄成長形,摺四摺,慢慢壓扁擀簿再摺四摺,再壓扁盡量擀薄。]
4. Use mould and cut out circles, pinch circles along tart cup. [用模具吸出撻皮,按入撻壳内備用。]

Filling [饀]
1. Scramble eggs, add in sugar, mix. Add milk and shredded coconut, mix. Add pastry flour, custard powder and baking powder, mix. Add in melted unsalted butter, mix. Wrap, set aside in fridge for 1 hour. [先打蛋搅匀加糖搅拌加入牛奶和椰𢇁搅拌均匀,加所有粉料拌匀,最後加已溶牛油撤底拌匀蓋好放置雪柜一小時。]

Assembly [組合]
1. Scoop filling into tart cups until it reaches the top. [放饀料在撻壳内,要平满。]
2. Bake at 350°F for 30minutes. [放入已预熱350度的焗爐内焗三十分鐘即可。]
