FRIED CANDIED WALNUTS WITH ROASTED SESAME RECIPE [琥珀合桃食譜]
This recipe makes 280g worth of walnuts [製成280克合桃]

INGREDIENTS [材料]
280g Walnuts [合桃]
80g Sugar [糖]
1tbsp Maltose [麥芽糖]
200ml Water [水]
Some Roasted White Sesame [熟白芝麻]
A Pinch of Salt [鹽]

DIRECTIONS [製作]
1. Heat up water and boil walnuts. Add a pinch of salt as it is boiling. Boil for a few minutes and take the walnuts out and strain. [煮滚水加少許鹽，落合桃烚数分鐘，取出隔水備用。]
2. With 200ml water, melt sugar and maltose. Once the sugars are melted, add in walnuts and cook until the walnuts have absorbed all the sugar syrup. [用水煮溶糖和麥芽糖，放入合桃煑至收水。]
3. Meanwhile, heat up oil to 100 degrees. Once the oil is ready, toss in the walnuts and deep fry until golden brown. Remove from oil and spread on a pan. [同時熱油鑊至中温油，倒入合桃，保持中小火炸至有顏色即取出。]
4. Sprinkle on some roasted sesame seeds, while the walnuts are still hot, coat evenly, let it cool and serve. [趁熱灑芝麻拌匀，待涼透放盒内慢慢享用。]
