Fried Candied Walnuts with Roasted Sesame Recipe (琥珀合桃) with Papa Fung
Crispy and sweet, this addictive snack is perfect for all occasions! You can even put it in salads to level up your salad game or just eat them as is.

FRIED CANDIED WALNUTS WITH ROASTED SESAME RECIPE [琥珀合桃食譜]
This recipe makes 280g worth of walnuts [製成280克合桃]
INGREDIENTS [材料]
280g Walnuts [合桃]
80g Sugar [糖]
1tbsp Maltose [麥芽糖]
200ml Water [水]
Some Roasted White Sesame [熟白芝麻]
A Pinch of Salt [鹽]
DIRECTIONS [製作]
1. Heat up water and boil walnuts. Add a pinch of salt as it is boiling. Boil for a few minutes and take the walnuts out and strain. [煮滚水加少許鹽,落合桃烚数分鐘,取出隔水備用。]
2. With 200ml water, melt sugar and maltose. Once the sugars are melted, add in walnuts and cook until the walnuts have absorbed all the sugar syrup. [用水煮溶糖和麥芽糖,放入合桃煑至收水。]
3. Meanwhile, heat up oil to 100 degrees. Once the oil is ready, toss in the walnuts and deep fry until golden brown. Remove from oil and spread on a pan. [同時熱油鑊至中温油,倒入合桃,保持中小火炸至有顏色即取出。]
4. Sprinkle on some roasted sesame seeds, while the walnuts are still hot, coat evenly, let it cool and serve. [趁熱灑芝麻拌匀,待涼透放盒内慢慢享用。]
