VEGAN STEAK 2 WAYS: FRENCH INSPIRED STEAK AU POIVRE (w/ Cognac or Brandy) STEAK w/ RED WINE SAUCE❤️

VEGAN STEAK 2 WAYS, FRENCH INSPIRED SAUCES (AU POIVRE HAS CREAM, COGNAC or BRANDY & PEPPERCORNS/RED WINE HAS SHALLOTS, WINE & BUTTER), GREAT FOR A ROMANTIC VALENTINE'S DINNER. I SERVED BOTH WITH POTATOES (SMASHED & FRIED) & Haricot Vert. VEGAN STEAK RECIPE IS LINKED IN THE VIDEO & ON MY CHANNEL

Vegan “Steak” Au Poivre Sauce @1:10
Ingredients:

2 vegan “steaks” (recipe link in video and on my channel)

Rainbow (or regular) peppercorns in a grinder

Salt

2 TB vegan butter (I use Melt or Earth Balance)

1/4 cup brandy or cognac (vegan brands listed below/ I used Martell)

1/4 cup veggie broth

1/2 cup cashew cream
***1/4 cup raw cashews soaked overnight in cool water at room temp OR quick soak in HOT water for 2 hours (drain and rinse). Place rinsed nuts into a blender and add 1/2 cup of fresh cold water, BLEND until smooth and then STRAIN cashew heavy cream into a bowl.***

2 TB Dijon Mustard

whole peppercorns and/or parsley for garnish

Side of choice (I made French Fries)

Instructions:

Prepare vegan “steak” according to video BUT season generously with the rainbow peppercorns and then cook “steak”, place in warm oven to keep it warm while you prepare the au poivre sauce.
Reserve “steak” drippings in skillet, set stove to medium heat
Melt the butter in the skillet
Add the brandy and broth. 
Scrape up any browned bits. Stir in the cream and mustard, bring to a boil. 
Reduce heat to a gently simmer, whisk and cook for 5 to 6 minutes longer. Season with salt & more peppercorn.
Plate steaks with sauce over the top and fresh parsley and/or whole peppercorn garnish. Serve with fries or whatever you like. Enjoy!

Red Wine Steak Sauce @3:05
Ingredients:

2 vegan “steaks” (recipe link in video & on my channel)

salt and black pepper to taste

1 large shallot, minced

3/4 cup vegan red wine (Trader Joe’s Charles Shaw Red is vegan)

2 to 3 tablespoons vegan butter (I use Melt or Earth Balance)

Side of your choice (I made smashed red potatoes seasoned w/butter, salt & pepper, onion & garlic powder and Trader Joe’s Truffle Mushroom powder and haricot vert)

Instructions:

Prepare vegan “steak” according to video, place in warm oven to keep it warm while you prepare the red wine sauce. Reserve the drippings in the skillet.

Add the shallot to the drippings and cook over medium heat until golden, about 2 minutes. Add the wine and scrape up any browned bits. Bring to a boil and cook until reduced by half and slightly syrupy, about 7 minutes; remove from the heat. Whisk in the butter, one piece at a time to make a glossy sauce, keep whisking so the sauce doesn’t break. Add salt and black pepper to taste.

Take “steak” out of the oven, place in red wine sauce and spoon sauce over “steak” a couple of times to get it hot and so the wine penetrates the “steak”. Serve sauce in a ramekin or pour over “steak” and potatoes. Enjoy!
