The 'dough ball' method for sourdough starter backup. A unique alternative to the drying method.
Need to take a break from your sourdough bread making? Don't have time to dry your sourdough starter backup before you go away? This is the quick method I use to backup and store my sourdough starter when I go away for an extended period of time (more than a couple of weeks). I haven't had the need to take a really long break from my sourdough baking yet, but if and when that day comes, this method is perfect for that too!
If you are interested in learning about my inspiration for this method, it came from the Flemish Desem Bread recipe in Laurel's Kitchen Bread Book, by Laurel Robertson. I have adapted the idea as an alternative way to store sourdough starter, but the recipe itself is a whole other adventure!
The Laurel's Kitchen Bread Book (USA), along with the Natural Tucker Bread Book by John Downes (Australia), have been two mainstays in my bread baking life, starting from the mid-nineties.
