Whole Grain Sourdough Fruit Cake - made with fresh milled flour - easy and delicious!

I've always wanted to make a proper fermented sourdough cake, and this whole grain sourdough fruit cake was a great place to start! This recipe is based loosely on the simple 'four ingredient' fruit cake I've been making for years. The only change I've made is the addition of whole wheat sourdough starter and a bit of extra time, and voila! Fermented fruit cake.

You could make this in a loaf pan for a sourdough fruit loaf or use any kind of baking setup you like to get a nice, healthy, wholemeal fruit bread or cake result. I think this would even be great baked as a wholemeal fruit slice type of thing - have fun and use your imagination!

You'll see in the video that I used freshly milled organic khorasan flour for my cake, but any whole wheat or whole meal flour will do. Just be sure to buy stoneground, unsifted, whole grain flour if you are not milling your own flour at home.

Note that khorasan is the general type of ancient wheat grain variety, which includes the variety 'Kamut'. Kamut is the commercially registered name of a particular khorasan variety.

INGREDIENTS
*I have made this recipe, and a half sized batch as well - both turned out excellent. All measures are metric.

500g mixed dried fruit (soak in boiling water then drain/cool)
500g milk of your choosing
300g whole khorasan/wheat/spelt or other flour (just make it whole!)
120g whole wheat sourdough starter
1/2 tsp salt
1/2 tsp dried orange zest
1 tsp mixed spice
1/2 tsp cinnamon
1 tsp vanilla extract
1 tbsp brown sugar
4 teaspoons baking powder
4 teaspoons ground flax/linseeds
A little extra flour if you think your cake dough/batter needs it.

METHOD
Pour boiling water over fruit and let it soak for 30-60 minutes.
Mix the rest of the ingredients in a separate bowl.
Drain the cooled, soaked fruit very well, and add to the main batter mix.
Ferment for 4-8 hours, depending on ambient temperatrue (refer to video demonstration).
Preheat oven to 160°C / 320°F and grease a cake tin (mine is 20 x 20 cm)
Mix the baking powder and ground flax/linseeds, then mix this into the batter thoroughly.
Spoon into the cake tin and bake for 90 minutes, turning halfway for even browning if needed.
Cool before slicing.
