Tasty & Healthy Green Tea Pudding Treats Three Ways - Under 200 calories

We prepared these tasty & healthy green tea treats in three fun ways to help us enjoy the summer in a low calorie but yummy fashion:

Popsicles, dibs, and regular pudding

The whole recipe is under only 200 calories and it is made from all natural ingredients.

The green food coloring is made from fresh spinach leaves and the green tea flavor is from freshly brewed green tea.

If you have matcha green tea on hand, then you can brew matcha green tea and ditch the spinach green food coloring.

You can eat the whole thing in one go if you would like and you don't have to prepare all three forms of the green tea pudding.

Calorie and Macro Information for the whole recipe:
186 calories, 7F, 21C, 6 Sugars, 7P

Recipe:

Ingredients:
16 g corn starch
20 g truvia powder or other sweetener powder
1 bag of green tea or matcha green tea powder
5 g baby spinach raw + water
1 egg yolk medium
3 g salted butter
1/4 tsp vanilla extract
1/2 cup skim milk or almond/coconut milk
Sea salt

Instructions:

Add 1/4 cup of boiling water into the green tea bag and let it brew for at least 5 min.

Green food coloring: Mix spinach with 1/4 cup of water and blend thoroughly.

1. In a small sauce pan add corn starch, sea salt, and truvia powder. Whisk together.

2. Slowly add skim milk, green tea, and food coloring (or just 1/2 cup matcha green tea) into the saucepan while whisk constantly. Add in the egg yolk and whisk together.

3. Turn the stove to medium high heat then whisk constantly until the first big bubble forms (about 10 min)

4. Turn the heat to low and whisk for another 1 min.

5. Pour the pudding over a finely meshed strainer and collect the pudding into a bowl.

6. Add butter and vanilla into the pudding and mix well.

7. Cover the pudding with a plastic wrap and make sure the wrap touches the pudding then store in the fridge for at least 4 hours (ideally one day).

8. After 4 hours or more, unwrap the pudding and stir with a spoon until it becomes pudding texture. You can serve as green tea pudding now.

9. To make green tea pudding popsicles scoop the pudding into popsicle molds. Then freeze for a few hours.

10. To make green tea pudding dibs scoop the pudding into candy or chocolate molds then put in the freezer for a few hours.

11. Store left over pudding in a bowl, make sure to cover the pudding with plastic wrap, and stir the pudding before serving. You can store up to a week in the fridge.
