Vegan Chai Cinnamon Cake
I love drinking iced chai during summer but I enjoy it even more during the colder months to keep me warm. So I decided to add all these beautiful flavors into a cake and it’s been one of my favorite recipes ever since. This chai cake is soft, moist and so simple to make! Aside from the tea, which gives the cake it’s delicious spiced flavor, there is also some cinnamon and vanilla in it and it’s drizzled with a sweet chai glaze. It’s the perfect cake for a cozy rainy afternoon!
recipe:
❁ ingredients:
1 cup chai with 2 tea bags
2 cups all-purpose flour
1/3 cup brown sugar
2 tsp baking powder
1 tbsp cinnamon
¼ cup oil
1 tsp vanilla extract
chai glaze:
2 tbsp reserved chai
1 cup icing sugar
brown sugar and cinnamon
❁ instructions:
Boil some water and prepare the chai from 2 teabags according to package instructions. I let mine steep for 5 minutes. Remember to reserve two tablespoons for the glaze! In a mixing bowl combine all the dry ingredients then add the tea, oil and vanilla extract. Mix well, then pour into a baking tin. Use parchment paper or grease your cake tin well. Bake at 180°C/350°F for about 30 minutes or until a toothpick comes out clean. Let the cake cool down. In a small bowl, combine the icing sugar and the reserved chai. Stir to combine then glaze the cake. Sprinkle with some cinnamon and brown sugar. Enjoy!
