Vegan Summer Rolls with Peanut Sauce

This is the only peanut sauce recipe you will ever need! It’s savory-sweet, a little spicy and takes only a few minutes to make! So many of my friends have already asked me about it, so I decided to also share it with you guys. I perfected this recipe over the last couple of years and I can honestly say, this is the best vegan peanut sauce you will ever have! It is versatile and goes with a lot of things (like in stir fry, curries or buddha bowls), but I love it as a dip for summer rolls the most. They are my favorite food, especially now that the weather is getting warmer again. And there are so many different ingredients you can fill them with so it never gets boring. Enjoy!

❁ recipe:

peanut sauce:
1-3 tbsp brown sugar
1 tsp chopped ginger
1 tsp chopped garlic
1 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp vegan fish sauce
1 tbsp lime juice
1 tbsp sweet chili sauce
1 tbsp sriracha
3 tbsp peanut butter
about 1/8 cup hot water

summer rolls:
rice paper sheets
rice noodles
lettuce
your favorite veggies
firm tofu
black sesame seeds
fresh mint and coriander

❁ instructions:
Add all the ingredients for the sauce in a bowl and whisk together until smooth. The hot water helps breaking the peanut butter apart. Add water until you reach your desired consistency. If you can’t find any vegan fish sauce where you live, just add another tablespoon of soy sauce and instead of rice vinegar you could also use more lime juice. The amount of sugar you add depends on the sweetness of your peanut butter. Start with a little then add more if needed. Cook your rice noodles according to package instructions, drain and let them cool off. Next wet your rice paper for a couple of seconds in room temperature water then place on a plate or chopping board, fill with your favorite veggies and tofu then carefully roll them like a burrito. I also like to add some sesame seeds and mint or coriander into mine but add whatever you like best. Tip: If you have trouble rolling your summer rolls and the rice paper keeps breaking try rolling them on a wet tea towel wrapped around a chopping board. Serve with crushed peanuts and sesame seeds on the peanut sauce.
