Creamy Vegan Lentil Curry

This recipe is a quick and easy dinner or lunch, has a lot of flavor and is healthy. You can serve it over rice, with naan or potatoes. You can also add some veggies or greens. I recommend spinach or tomatoes.

recipe:

❁ ingredients:
1 onion, chopped
2 cloves of garlic, minced
1 thumb-size piece of ginger, minced
1 hand full fresh coriander
1 tbsp curry powder
1 tsp cumin
1 tsp fenugreek
1 tsp chili flakes or powder
1 tsp garam masala
1 tbsp tomato puree
2 cups vegetable broth
1 cup coconut milk
1 cup red lentils
salt and pepper

❁ instructions:
Chop the onion, the garlic and the ginger. Wash your lentils. Add oil to your pan and on medium high heat fry the onion, garlic and ginger. Add all the spices and the fresh coriander and fry for another 2 to 3 minutes. Add the tomato puree and fry for another 2 to 3 minutes. Add your vegetable broth, lentils and coconut milk. Cook on low heat until the lentils are soft. Stir every other minute to keep the lentils from burning. Add more water while cooking when needed. Add salt and pepper. Serve over white rice and naan and garnish with fresh coriander. Enjoy!
