Easy Vegan Lentil Stew

This is a recipe I make every year as soon as the weather is getting colder again. This lentil stew is so warm, hearty and comforting it’s perfect for a cold and rainy fall day! And it is so easy to make! I usually make a big pot so that I have a lot of leftovers for later. I like to add carrots and potatoes to my lentils but you could also use celery root, leeks, beans or some vegan sausages (Vienna Sausages or Frankfurters). Just make sure to wait until the lentils are done cooking bevor you add the salt!

recipe:

❁ ingredients:
2 tbsp vegetable oil
1 yellow onion, chopped
3 cloves of garlic, chopped
2 large potatoes
2 large carrots
1 cup lentils
4 cups vegetable stock
2 bay leaves
1 cup frozen green peas
salt and pepper to taste
1 hand full fresh parsley

❁ instructions:
Wash your lentils. Peel and chop your carrots, potatoes, onion and garlic. Add the oil into a large pot, then add the onion and garlic and fry for about 3 minutes. Then add the potatoes and carrots. Add your vegetable stock, lentils and bay leaf. Bring to a boil then cover and reduce the heat. Simmer for about 35 minutes, or until the lentils are soft. Add your frozen peas and seasoning. Remove bay leaves and serve with some fresh parsley and some sourdough bread.
