4 easy vegan weekday meal ideas

In this video I share with you 4 super quick and easy recipes for a quick weekday lunch or dinner! Many of the ingredients are used in multiple recipes so this is perfect for a singel grocery store trip. It’s also only 4 recipes instead of 5 because on the last day you will probably have some leftovers to finish.

150g vegan crème fraiche or vegan sour cream
1 tbsp sweet paprika
salt and pepper
1 tsp dried oregano
1/2 tsp cinnamon
2 cloves minced garlic

200g vegan chicken chunks
1 tsp sweet paprika
salt and pepper
1/2 small red onion
1/2 a carrot
handful purple cabbage
hand full fresh spinach or other greens
vegan feta
vegan mayo (optional)
pomegranates (optional)
❁ vegan Flammkuchen

vegan store bought flammkuchen dough
150g vegan crème fraiche or vegan sour cream
salt and pepper
1/2 zucchini
3 large mushrooms
1/2 stick leek
1 spring onion
1 hand full fresh spinach
vegan feta

Bake for 15 minutes at 220°C/430°F.

2 tbsp olive oil
2 tbsp lemon juice
1 tsp mustard
1 tbsp maple syrup
salt and pepper
fresh parsley (optional)

1 large carrot
1 handful purple cabbage
2 handful fresh spinach
1/2 red onion

1 can jackfruit
1 can corn
1 can beans
1 cup BBQ sauce
taco seasoning
salt and pepper

taco shells
1 mashed avocado
vegan crème fraiche or sour cream

Bake for 25 minutes at 180°C/356°F.

1 tbsp olive oil
1 spring onion
5 large mushrooms
1/2 zucchini
2 cloves of garlic
1/2 leek
250 ml soy cream (or any other plant cream)
salt and pepper to taste
500g gnocchi
fresh parsley (optional)
vegan parmesan (optional)
