Vegan Avocado Pesto

This vegan avocado pesto is quickly made and full of flavour. It takes only 10 minutes to prepare, which makes it a perfect last-minute lunch or after work/school dinner. You can also make it ahead of time and store it in the fridge for up to 48 hours. If you want to change things up, you can add different kinds of nuts or use spinach instead of basil. Enjoy!

recipe:

❁ ingredients:
1 avocado
1/2 cup fresh basil leaves (about 1 handful)
1 garlic clove
1 tbsp lemon juice
1 tbsp olive oil
1 tbsp pine nuts
1/2 tsp salt
1/2 tsp pepper
1 tsp pasta water

❁ instructions:
Add all the ingredients to a blender or food processor, and blend until smooth. I used pine nuts but you can use any nuts you like or just leave them out completely. Cook your pasta according to package instructions. Before draining save 1 tsp of pasta water and add to your pesto, adjust seasoning to taste then mix everything together. Serve over your favourite pasta with some vegan parmesan cheese.
