Easy Vegan Spicy Gochujang Noodles

If you have never tried gochujang before, you’re missing out! Gochujang is a korean red chili paste that has a delicious savory-sweet punchy heat to it and tastes amazing on tofu, in stir frys or bbq sauces. It comes in a red plastic tub, and you can usually find it at your local asian supermarket. This is my go to recipe, for when I need something super quick and delicious. The sauce is spicy, but also sweet and the udon noodles are chewy and filling. For protein, I like to add some (fried) tofu and also whatever vegetables I have on hand. This dish takes literally only a few minutes to prepare and is a hit with everyone who tried it!

recipe:

❁ ingredients:
1 clove of garlic
1 scallion
1 large carrot
1 handful of cabbage
1/2 a block medium firm tofu
1 tsp lemon juice
2 tbsp soy sauce
1 tsp sesame oil
1 tbsp maple syrup
1 heaped tbsp gochujang paste
1 package udon noodles (150g)
1 tbsp sesame seeds

❁ instructions:
First mince the garlic, then chop the carrot, scallion and cabbage into thin strips. Cook your noodles according to package instructions. Meanwhile whisk together all the sauce ingredients in a small bowl. Add some oil to your wok and fry the carrots, scallion and cabbage, then add the garlic. Next add the tofu and noodles and fry for a minute or two. Then add the gochujang sauce. Make sure the sauce covers everything and cook for a few minutes or until the sauce reduces. Serve with a sprinkle of sesame seeds and scallion. Enjoy!
