急凍雞腿變身〈白切雞〉
急凍雞腿2隻
新鮮黃薑40克
1湯匙雞粉
1 湯匙紹興酒
鹽及芝麻油適量
一些薑和蔥。
雞腿解凍洗淨, 放入滾水汆燙10秒, 再放入另一鍋滾水, 加入蔥、黃薑、薑、1湯匙雞粉、1湯匙紹興酒, 用小火煮20~25分鐘, 撈出放入冰水泡5分鐘, 抹一點鹽及芝麻油, 斬件佐以薑蔥蓉。
Frozen Chicken Legs White Cut Chicken
Ingredients:
2 frozen chicken legs
Fresh turmeric 40 grams
Chicken bouillon powder 1 tablespoon
Shaoxing wine 1 tablespoon
Moderate amount of salt & sesame oil
Some ginger and spring onions.
Steps to follow:
Thaw and rinse the chicken legs, Blanch for 10 seconds and soak in cool water for a moment, Reput in boiling water, Add in spring onions, turmeric, ginger, 1 tablespoon of chicken bouillon powder and 1 tablespoon of Shaoxing wine, Cook in low heat for 20~25 minutes, Scoop the legs out and soak in ice water for 5 minutes, Wipe with a bit of salt and sesame oil, Cut into parts & Dip with the ginger scallion sauce for serving.
Ginger Scallion Sauce:Pour hot oil to chopped ginger, spring onions and salt, Mix well.
