薑蔥黃酒雞 Braised Ginger Scallion Chicken with Shaoxing Wine **字幕CC Eng. Sub**

🟢材料:
雞1隻
紹興酒(黃酒) 200毫升
薑、紅蔥頭、蒜頭、蔥 適量
鹽 1茶匙
生抽 1茶匙
老抽 1茶匙
糖 1茶匙
蠔油 1茶匙
生粉/澱粉 1/2茶匙
胡椒粉 少許

🟢做法:
1️⃣ 將雞洗淨斬件,加入1茶匙鹽、少許胡椒粉、1湯匙紹興酒、1/2茶匙生粉(澱粉)、少許油醃半小時。
2️⃣ 熱鍋煎雞肉至表面微金黃色,再加入薑、紅蔥頭、蒜頭爆炒,加入1茶匙生抽、1茶匙老抽、1茶匙糖、1茶匙蠔油、200毫升紹興酒,中小火炆8分鐘。
3️⃣ 收乾醬汁,加入蔥段,翻炒均勻上碟。

🟢Ingredients:
Chicken - 1 whole
Shaoxing wine (yellow wine) - 200ml
Ginger, shallots, garlic, spring onions(scallions) - as needed
Salt - 1 teaspoon
Light soy sauce - 1 teaspoon
Dark soy sauce - 1 teaspoon
Sugar - 1 teaspoon
Oyster sauce - 1 teaspoon
Cornstarch - 1/2 teaspoon
White pepper powder - a pinch

🟢Cooking Directions:
1️⃣ Wash and chop the chicken into pieces. Marinate with 1 teaspoon of salt, a pinch of white pepper powder, 1 tablespoon of Shaoxing wine, 1/2 teaspoon of cornstarch, and a little oil for half an hour.
2️⃣ Heat the wok and fry the chicken until the surface is slightly golden. Then add ginger, shallot , and garlic to stir-fry. Add 1 teaspoon of light soy sauce, 1 teaspoon of dark soy sauce, 1 teaspoon of sugar, 1 teaspoon of oyster sauce, and 200 ml of Shaoxing wine. Braise over medium-low heat for 8 minutes.
3️⃣ Thicken the sauce, add spring onions and stir-fry until well combined. Serve hot.
