豉油皇蒸雞肶 Steamed Chicken Legs in Soy Sauce (有字幕 With Subtitles)

雞腿2隻,薑蔥適量。

雞腿洗淨吸乾水,略為切開(可不切)加入薑蔥、1湯匙紹興酒、1湯匙生抽、1湯匙老抽、1/4茶匙鹽、1茶匙糖和少胡椒粉醃2小時。水滾下鍋,大火蒸5分鐘轉中火再蒸5分鐘,如果雞腿沒切開加多2~3分鐘,下1/2茶匙玫瑰露酒和一小塊冰糖把蒸雞汁收至濃稠淋回雞上。

Ingredients:
2 Chicken Legs, Some ginger and spring onions.

Steps to follow:
Rinse and drain the chicken legs, Carve the chicken legs half way((not a must), Marinate the chicken legs with the seasonings for 2 hours, Steam on boiling water for 5 minutes on high heat, Turn to medium heat and steam for another 5 minutes(2 ~ 3 minutes more if no carving on the legs), Let it cool down a bit and cut into parts, Prepare the thickening sauce and baste back on the chicken legs
Seasoning: Some ginger and spring onions, 1 tbsp of Shaoxing wine, 1 tbsp soy sauce, 1 tbsp dark soy sauce, 1/4 tsp salt, 1 tsp sugar , a bit of white pepper powder.
Thickening sauce: Steamed-chicken-sauce, 1/2 Mei Kuei Lu Chiew(a Chinese wine), a small piece of rock sugar.
