客家蒸鹹雞 Steamed Chicken in Hakka Style #賀年菜 #ChineseLunarNewYear #簡易宴客菜

今日是年三十晚, 中國人傳統是吃團年飯, 團年飯少不免有雞, 這是冰鮮雞, 重約1公斤, 我做一個客家蒸鹹雞, 適量薑, 適量的蔥, 徹底洗浄雞, 雞去除內臟洗淨後, 掛起來瀝乾水, 大約30分鐘左右, 先醃雞, 鹽2茶匙, 裡裡外外都抹勻,用刀背揼碎薑, 將薑汁擠到雞肉上, 薑渣留下放雞肚內, 再抹勻, 雞和花彫酒很匹配, 倒入2湯匙花彫酒(紹興酒), 內攏也要抺勻, 將薑渣填入雞腔, 這是因為不想浪費薑渣, 如果你喜歡切片的也可以放薑片, 填入蔥, 醃2小時, 1小時後將雞反身, 醃味可以勻循些, 如果在醃製過程中將雞放在冰箱中, 先取出放至與室溫相若才蒸, 這種做法也可以醃了放冰箱過夜。蒸雞的時間, 視乎雞的大小, 這隻蒸25分鐘可以了, 水滾落鑊, 首先大火蒸15分鐘, 然後轉中火蒸剩下的10分鐘。大火蒸了15分鐘, 轉中火蒸10分鐘, 現在總共蒸了25分鐘, 熄火焗10分鐘才開蓋。焗了10分鐘, 用筷子插雞腿最厚的部份, 如果容易穿透並且沒有血水, 代表雞熟透了, 讓它攤涼, 白切或手撕雞也可以。吃團年飯很講意頭, 要有頭有尾會留雞尾, 平時的日子可以不留雞尾。
