wait the water boil again
now boiling
turn off the heat
soak it for 25 - 30 mins
depends on the chicken size big or small
soak for 25 mins if small
soak for 30 mins if big
you may take out the chicken when it soaks for half of the time
lift up the chicken let the water pour out from the cavity
turn on the heat let the water boil again
turn off the heat after water boiled
soak for the remain time
this method the chicken come out may be more fully cooked
also have people soak for 25 - 30 mins without take it out at half time
this method the chicken may be have a bit of blood beside the bone
choice by yourself
I make a ginger sauce while soaking for the chicken
mince the ginger
shred the spring onions
put down moderate amount of salt
pour in hot oil
I soaked it for 10 mins
I would like the chicken fully cooked
I lift it up
let the water pour out from the chicken cavity and put it down
cause I open the pot
so I turn on the heat again
let it boil again
then cover it
soak for the remain time
it already soaked for 10 mins
so I soak more for 15 mins
you can turn over the chicken if the water can't soak the whole chicken
turn off the heat after water is boiled again
cover and soak for 15 mins
I've totally soaked it for 25 mins
take out the chicken now
the side pot is cold boiled water
put it down into cold water and then with ice cubes
if no ice water
put it on the plate let it cool down naturally
the chicken's already cool down and is taken out
the chicken is sweep with sesame oil before chopping
if you stand treat
do not put the viscera and feet on the plate
