How to know when bulk fermentation is over?

You can’t just blindly follow a sourdough bread recipe and expect it to turn out well. There are all sorts of different factors that will make your baking experience totally different to mine, or any other. Your kitchen is probably not at the same Temp as mine, your country might have higher or lower humidity, your starter might be stronger or weaker and also I’m sure we don’t use the same brands of flour. This is why I really like this method! You can follow this method, see how the bread turns out and simply adjust your fermentation accordingly.

Specs for two loaves:
540 gr strong white bread flour
120 gr whole meal flour
520 gr water
180 gr starter
16 gr salt
