This video will show you how to fry beautiful and crispy fried shallots. Controlling the heat is the key, and the frying time at the end is very important. I prefer making fried shallots at home using good quality oil which makes it healthier.

这视频会教大家如何炸出美又酥脆的炸葱头。火候掌控是关键，炸到最后的那黄金一秒钟很重要。平时我会在家自制炸葱头，使用好的油也比较健康。

Ingredients:
Shallots | 红葱头
Salt | 盐
Plain flour | 中筋面粉
Baking Soda | 苏打粉

00:18 | I'm using Echalion shallots, it's easy to peel and cut into slices
00:45 | Wash away the stickiness with clean water, so that the fried shallots have a nice golden colour
01:43 | Turn off the heat immediately after fried shallots turn light yellow. The remaining temperature will gradually darken the colour of the fried shallots
01:59 | Version 1(Golden Fried Shallots)►This fried shallot oil can be kept and used for other dishes, such as making dry noodles
02:55 | The oil must be hot enough before adding in the shallots for crispiness
03:40 | Version 2(Crispy Fried Shallots)►This fried shallot oil is not recommended to used
