Why Black Garlic❓
Black Garlic - that has undergone the fermentation process contains 2-3 times higher concentration of antioxidants compared to regular raw garlic. It is also richer in phytonutrients and amino acids. It has more of a compound called S-Allylcysteine (SAC). SAC helps the body to absorb allicin and hence may be more effective at helping your body getting the health benefits provided by allicin.

High concentration of antioxidants in black garlic helps fight off cancer especially colon cancer. It also helps protect the heart by lowering bad cholesterol and fat in the body. Anti-inflammatory properties in black garlic helps prevent cognitive conditions such as Alzheimer’s disease and Parkinson’s disease by reducing inflammation in the body. This boosts the body immune system. Black garlic is capable in controlling blood sugar level in the body to prevent diabetes and also helps keep body weight in check.

Black garlic is fresh raw garlic that has undergone a fermentation process. During the fermentation process, the garlic cloves turn into a distinct black colour. It has a flavour that linger like molasses and balsamic vinegar, but it does not have the raw brute taste of raw garlic.

Making black garlic at home is simple and low cost. You can use either rice cooker or slow cooker for the fermentation process. I chose to use the slow cooker and the result was good. For easy daily consumption, I have ground the garlic cloves into powder and made into capsules. I take one capsule per day after meal for health benefits. Wishing everyone with good health!
