Homemade Vegetable Soup Recipe

Timings:
• Prep Time: 10 mins.
• Cook Time: 30 mins.
• Total Time: 40 mins.

Servings: 8.

Ingredients:
• 4 tbsp Olive Oil.
• 3 tbsp (50g/1 ½ oz) Butter.
• 2 Carrots, peeled and chopped into small cubes
• 2 Potatoes, peeled and chopped into small cubes.
• 1 Leek, sliced thinly.
• 2 Garlic Cloves, finely chopped.
• 1 tsp Dried Thyme.
• 1 tsp Dried Sage.
• 2 Bay Leaves.
• 5 cups (1200ml/41 fl oz) Vegetable or Chicken Stock.
• 2 tbsp Plain Flour.
• ¼ cup (100ml/3.38 fl oz) Cream.

Method:
1. In a saucepan, melt the butter and oil together.
2. Add the chopped carrot, potatoes, leek, garlic and herbs and mix together.
3. Place on medium heat, cover with the lid and cook for 10-15 minutes until the vegetables are partially soft. Stir a few times while cooking so it doesn’t stick.
4. Sprinkle over the flour, stir it in and cook for 1 minute.
5. Pour in the stock and give it a good stir.
6. Bring to a boil and simmer for 15 minutes until the vegetables are soft. 7. Stir often to make sure it doesn’t stick.
8. Remove from the heat and using a blender blitz to the consistency you like, we love it smooth with no lumps.
9. Pour over a little cream and mix through.
10. Enjoy hot with some homemade brown bread.
