How to make Fat Rascals - Scones from Betty's Tea Rooms, Yorkshire, UK.

I watched an episode of the BBC's "Remarkable Places to Eat" where Great British Bake Off champion Nadiya Hussain visited Bettys Cafe Tea Rooms in Harrowgate, Yorkshire, UK. There she tried their famous "Fat Rascals".

Fat Rascals are like a Scone, but with citrus flavours inside, and are decorated with Glacé cherries and blanched Almonds.

I was amazed that I'd never heard of these marvellous scones so I decided to make a batch. They were an instant hit with the kids and husband. So after three more batches, I decided to make a video of them for ScrummyTV.

Nadiya said whenever she gets the chance she'll take her children to Bettys Tearooms to enjoy a Fat Rascal. Next time I'm in Yorkshire I plan to do exactly the same. A big thank you to both Nadiya and Betty's Tea rooms.

FAT RASCALS RECIPE

TIMINGS
• Prep Time: 10 mins.
• Cook Time: 20 mins.
• Total Time: 30 mins.

SERVINGS
Serves 6 people. Makes 6 scones.

INGREDIENTS
• ¾ cup + 3 tbsps (150g/5oz) plain flour, sieved.
• ¾ cup + 3 tbsps (150g /5 oz) self-raising flour, sieved.
• 1 teaspoon baking powder.
• ½ cup + 1 tbsp (120g/4oz) cold butter, diced.
• ¼ cup + 1 tbsp (90g/3oz) light brown sugar/white sugar.
• 1 orange zest.
• 1 lemon zest.
• ½ tsp nutmeg.
• 1 tsp cinnamon.
• 1 cup ( 150g/5oz) dried mixed fruit.
• 2 eggs, medium size.
• 40ml double cream/milk.

To decorate:
• 1 egg yolk.
• 1 tablespoon water.
• 12 glace cherries cut in half.
• 24 blanched almonds.

To serve:
100g (3½oz) clotted cream.
70g (2½oz) strawberry jam.
50g (1¾oz) unsalted butter.

METHOD
1. Preheat the oven to 200°C /180°C Fan /400°F /Gas Mark 6.
2. In a large bowl, sieve together the flours, then add the baking powder and mix together.
3. Add the butter and rub it into the flour until the mixture resembles fine breadcrumbs.
4. Add the sugar, nutmeg, cinnamon, citrus zest and mixed fruit. Mix until combined.
5. Beat the egg and cream together and add to the mixture.
6. Add a little extra cream/milk if the mixture is too dry.
7. Mix together until you have a soft dough.
8. Using a ¼ size measuring cup or big spoon, scoop the mixture up and shape into a round ball and flatten slightly to a height of 1” or 2.5 cm deep.
9. Mix the egg yolk and water together. Brush on top of each of the fat rascals.
10. Decorate with cherries and almonds.
11. Place a sheet of greaseproof paper on a baking tray.
12. Bake in the oven for 15-20 minutes until golden brown.
13. When baked, remove from the oven and place on a wire rack to cool.
14. Fat rascals are best served warm from the oven.
15. Serve with butter, jam, and clotted cream.
16. Mmm Scrummy!!!

STORAGE
• Will keep for up to 3 days in an airtight container.
• Can also be frozen for 3 weeks and reheated at a low temperature.
