How to make Rhubarb and Ginger Slice

Rhubarb and Ginger Slice Recipe

TIMINGS:
• Prep Time: 20 mins.
• Cooking Time: 40 mins.
• Total Time: 60 mins.

SERVINGS:
Serves: 16 slices.

INGREDIENTS:
• 4 cups (400g/14½oz) rhubarb, cut into 2cm/ ¾ inch pieces.
• 2½ tbsp Caster Sugar.
• 1 tbsp Water.
• 1¼ cup + 2 tbsp (225g/8oz) Plain Flour.
• ½ tsp Bicarbonate of Soda/Baking Soda.
• ¾ cup + 2 tbsp (175g/7oz) Light Brown Sugar.
• 1 cup (225g/8oz) Butter, room temperature.
• 1¼ cup (125g/4½ oz) Porridge Oats.
• 1½ tsp Ground Ginger.

Oven Temperatures.
Preheat the oven:
• Fan Oven: 160°C/320°F.
• Oven: 180°C/360°F.
• Gas Mark 4.

METHOD:
1. Preheat the oven to the above temperatures.
2. Prepare a square cake tin measuring 9 x 9 inches or 23 x 23 centimetres by lining it with parchment paper.
3. In a saucepan, combine the sliced rhubarb, water, and sugar.
4. Simmer the mixture for 10 minutes or until most of the liquid has evaporated, then set it aside to cool.
5. In a medium size bowl mix the flour, sugar, and bicarbonate of soda together.
6. Add in the butter and use your fingers to rub the butter into the dry ingredients. The mixture will be slightly sticky.
7. Add the porridge oats and ground ginger to the bowl and rub them in until the mixture clumps together.
8. Press two-thirds of the mixture into the prepared cake tin using your fingers to press it down and make it level.
9. Add the cooled rhubarb mixture to the tin, spread it out, and flatten it until level.
10. Finally, sprinkle the remaining mixture over the rhubarb and lightly press the mixture down with the back of your hand.
11. Bake in the oven for 35 to 40 minutes.
12. Allow the rhubarb and ginger slices to cool in the tin before cutting with a sharp knife into 16 squares.
13. Mmm, Scrummy!!!

STORAGE:
• It is recommended to store it in the refrigerator, especially if the environment is humid or warm. When stored properly, the slice should last 4-5 days. However, the texture may change over time as the moisture from the rhubarb softens the oats. For best results, consume the slice within the first few days of making it.
