Only Ten Grams of Crusty Fifty-Day-Old Starter Made this Epic Sourdough Loaf

I went away and left my starter in the fridge for 52 days without feeding it once. I've always wanted to see how long I could leave it without feeding and still resurrect it with building just one levain and no additional feeds.
