JAPANESE OMELETTE WITH CHINESE GARLIC CHIVES | TAMAGOYAKI | VEGETARIAN

You may have heard of tamago yaki (Japanese omelette) and you might have possibly tried one with sushi, which usually has dashi and some sugar in it. This one is a variation using Chinese garlic chives and is more savoury. It goes well with rice dishes and miso soup and it's another great way to use up the garlic chives. It doesn't need a lot of ingredients so test it out some time!

Makes one omlette:
3 eggs
5 Chinese chives
1 tsp soy sauce
Sesame oil
Salt

Japanese omelettes are made by rolling up thin layers of egg. Definitely recommend that you grease the pan with a brush or kitchen paper after each egg layer so that the egg flips easily. I've used a square pan, specifically designed to make Japanese omelettes, but you can make them in normal circular frying pans. You'll just have slightly floppy ends that will be uneven but otherwise it makes no difference.

It was actually my auntie that taught me how to make Japanese omelettes. I think I was around 7 years old and we were in her kitchen in Japan. I was helping her make breakfast and I watcher her, hypnotised. She then let me make them and I kept making them even when we came back to England. My dad used to love the omelettes I used to make and was always impressed that I managed to make them without burning it. He watched me once and was surprised that I made them "how you're supposed to" and I told him with a massive grin that auntie taught me. I will forever treasure those memories.
