HOW TO MAKE SUPER SOFT CARROT CAKE | EASY BAKES | 簡単なにんじんケーキの作り方
This is a nice and simple carrot cake recipe ٩(。•́‿•̀。)۶
I love it because you just have to grate the carrots and mix all the ingredients in a bowl. It's not complicated, no special techniques needed. You don't need to be an expert baker at all - but you get awesome cake every time!
I've used a baking tin so that I could cut it into square pieces so that it's more like a tray bake but you could also pour the cake mixture into a circular 20cm cake tin. Course, if you're being fancy, you could slice it in half and add a layer of whipped cream or cream cheese icing in the middle, and load it on top as well. I can't really eat cream and I prefer simpler cakes so I skip all that but this cake will be perfect for decorating.

175g self raising flour
175g muscovado sugar
175ml sunflower oil
140g carrot
100g raisins
3 eggs
1 tsp bicarbonate of soda
1 tsp ground cinnamon
For anyone who wants a cream cheese frosting, use the measurements below:
20g softened butter
60g cream cheese
300g icing sugar
It makes quite a lot of frosting so you can cut the cake in half and use some as the filling and also for the top. If you've used a cake tin, you could use the frosting to cover the whole exterior. If the frosting is a bit too soft, add extra icing sugar one tablespoon at a time. I normally make it and refrigerate it for about 30mins before spreading it on the COOLED cake.
