SUPER QUICK KOREAN CHICKEN LETTUCE WRAPS | COOKING WITH MICHAEL | DAK GALBI WRAPS

This has become one of Michael's favourite dishes... though I feel like I say that a lot these days (≧◡≦) he really loves the stuff. It's super easy and it doesn't take much time at all. We can't recommend it enough. It's great for a quick lunch or even as a drinking snack. It's a little spicy and totally finger licking good!

Serves 2
300g chicken
1/2 onion
3 cloves of garlic
1.5 tbsp gochujang
1 tbsp soy sauce
1 tbsp white wine vinegar
1 tsp honey
Lettuce
Cucumber
Cheese

Adjust flavours according to your palate. If you prefer spicy food, add 1.5 tbsp of gochujang and also some chilli powder. Gochugaru chilli is the best for this - it compliments the gochujang paste well. If you prefer it milder, add only 1 tbsp gochujang and add more honey. The honey will take away some of the heat. I’m normally cautious initially so that I can add more later if I need it - taking away strong flavours afterwards can be a bit difficult. Some people substitute half of the gochujang with ketchup but I'm not a fan. I'd rather add a bit of extra honey to take some of the heat off from the gochujang.

You can prepare the chicken ahead of time and let it marinate in the sauce for about 30mins before cooking, but we've often cooked it straight away and it's been great too. It goes really well with salad vegetables so make your own ensemble.
