Beef offal skewer stall around the street corner was a memory shared by many Cantonese.
The best-tasting beef offal skewer I can recall is the one outside my junior high. I would be on the edge of my seat ready to rush out the second the teacher declared the class was dismissed. It never failed to make my day. Well, I mean, of course, there was learning and stuff. 😁😁
When I am out in the world trying to make my mark, I've never gone past a beef offal stall without getting one. Yet, it doesn't taste the same as I remember.
So I'm gonna recreate my favorite snack and hopefully, relive my teenage years.
牛雜鍋!
🍲一個在廣東大街小巷一年四季都可以看到的經典小吃
記憶裡最好吃的牛雜是初中門口的那個攤位,現在買的都不是那個滋味了
那就努力復刻出神仙牛雜+靈魂蘸料的味道吧😄
這個牛雜蘸料淋豆腐、青菜簡直上頭✨
必點的魚丸撈麵🍜,吸滿牛雜鍋的湯汁
喝的來一杯用五種食材熬的經典“冰廣式”葛水🍹
解膩下火又養生,喝完整個人都舒服了,到位!👍👍
夏天快到了,廣式涼茶又要開始耍花槍啦!
📜廣式牛雜煲菜單
✨牛雜配料:牛脆骨 牛百葉 牛腎 牛肚 牛腸 牛肺 牛筋
高湯配料:牛骨 雞爪 薑片 蔥段 料酒 白開水
✨牛雜湯底:
1.調製牛雜醬: 南乳 腐乳 柱侯醬 甜麵醬 花生醬 黃豆醬 蠔油
攪拌
2. 炒醬,加高湯、香料包 片糖
3. 湯底加白蘿蔔和馬鈴薯最好吃
✨牛雜蘸醬:
蘸醬+黃糖、牛骨湯、澱粉水
(先把醬給炒香,再加高湯)
✨靈魂蘸醬調配:
1. 牛雜蘸醬鋪底
2. 加上:香菜 小米辣 蒜末 蔥花 花生碎 芝麻 蒜蓉辣醬
✨葛水配料:甘蔗 葛根 茅根草 胡蘿蔔 馬蹄
🌸Kudzu root soup:
Sugar cane, kudzu root, cogon grass, carrot, water chestnut;
🌸Cantonese beef offal:
✨Beef offal: beef gristle, beef tripe, beef kidney, beef rectum, beef intestine, beef lung, beef tendon.
✨Beef offal broth: beef bone, chicken fingers, ginger slices, scallion chunks, cooking wine, plain boiled water.
✨Beef offal sauce: fermented red bean curd, fermented bean curd, Chu Hou paste, sweet sauce made of fermented flour, peanut butter, fermented soy bean sauce, oyster oil, broth
✨Beef offal dip: beef offal sauce, coriander, chili pepper, mashed garlic, scallion dices, ground peanut, sesame, Chili garlic sauce.
✨Beef offal soup base: beef offal dip, beef offal broth, spice bag, jaggery.
