Soft delicious SPINACH and CHEESE MUFFINS - prepare them for breakfast in 10 minutes

Spinach and cheese muffins - soft, moist, fluffy, flavorful muffins with spinach and cheese are delicious, perfect for breakfast, brunch or as a snack on the go. These muffins are perfect warm or cold.
Instead of spinach, you can use chard leaves or collard greens.

Ingredients:

boiling water
330 g (11.5 oz) cleaned and chopped fresh spinach

300 g (10.5 oz) all-purpose flour
10 g (2.5 tsp) baking powder
3 g (1/2 tsp) salt
3 eggs
250 g (9 oz) Greek yogurt
250 ml (1 cup) milk
100 g (3.5 oz) sunflower oil
200 g (7 oz) feta cheese

Grease and flour 12 cup muffin pan. You will either need two pans, or you can bake in two batches.
Pour boiling water over spinach. Set aside for 10 minutes.
Stir together flour, baking powder and salt.
In a big bowl beat eggs until they are light and fluffy.
Add greek yogurt, milk and oil. Stir well to combine and then gradually add flour mixture. Mix well just until blended.
Drain the spinach, squeeze out the excess water and cut into small pieces.
Crumble feta with your fingers.
Add spinach and feta to the mixture. Using spatula stir well to combine.
Don't over mix.
Preheat oven (with fan) to 180 C (350 F).
Fill muffin cups almost to the top by spooning in batter.
Bake in preheated oven for about 20-25 minutes.
Cool the muffins for at least 15 minutes before removing from the pan.
