Raffaello Strawberry Cake
Raffaello Strawberry Cake - soft, moist sponge cake with a hint of strawberry juice and with coconut vanilla filling with fresh strawberries in between...it's heavenly cake!
Ingredients:
6 eggs
pinch of salt
3.5 oz (100 g) sugar
2.6 oz (75 g) all-purpose flour
8.8 oz (250 g) butter, room temperature
8.8 oz (250 g) powdered sugar
5.3 oz (150 g) unsweetened shredded coconut
18.6 oz (550 ml) + 6.7 oz (200 ml) milk
3 oz (86 g) vanilla pudding powder
1.7 oz (50 ml) + 1.7 oz (50 ml) strawberry juice
7 oz (200 g) fresh strawberries
8.8 oz (250 ml) whipping cream

Preheat the oven to 340 F (170 C).
Line 8-inch (20 cm) springform pan with parchment paper.
Separate egg whites from yolks.
Put pinch of salt in egg whites and beat until stiff peaks form.
Gradually add sugar.
Add yolks, one by one.
Gradually add flour, mixing slowly until just blended.
Pour the mixture into prepared pan.
Bake in preheated oven for 35-40 minutes.
Beat butter with powdered sugar that you will add gradually.
Add unsweetened shredded coconut. Mix well to combine.
In a bowl stir together vanilla pudding powder and 200ml of cold milk and mix well. Heat 550 ml of milk to a full boil over medium heat. When it boils, add in the pudding mixture stirring constantly and cook stirring constantly for about 1 minute.
Gradually add the pudding, while it is still hot, into the butter mixture. Stir well to combine.
Cut the sponge cake in two layers.
Soak each layer with 50 ml of strawberry juice.
Spread half of the filling over the first layer.
Slice the strawberries and spread them over the filling.
Top with the next layer.
Spread second half of the filling.
Whip up some whipping cream and spread it on top and sides of the cake.
Decorate as you like.
