Coconut Tres Leches Cake

This is one of my favorite cakes….It’s so moist and delicious!

Ingredients:
1 Prepared yellow cake from scratch or box mix is fine in a 9x13 inch pan
1 can of sweetened condensed milk
1 cup of coconut milk
1/2 cup of half and half

For the whipped cream:
3 cups of heavy cream
1/2 cup of powdered sugar…or more if you like it sweeter
1/2 tsp of coconut extract. If you don’t have it you can use vanilla extract but I highly recommend using the coconut extract for this cake.
Make the cake according to box instructions ….or however you make your scratch cake.
Poke the cake all over with a fork.
Pour your milk mixture over the cake and let if set for about 2 to 4 hours. You can even let if set overnight if you like.
After the cake has set make your whipped cream, spread it all over the top sprinkle the whipped cream with some shredded sweetened coconut.
