Eggnog Biscotti
A great addition to your holiday recipes!
Ingredients:
1/2 cup of butter (1 stick) room temperature
1 cup of sugar
2 eggs
1/2 cup of eggnog
1 tsp of rum extract (or 2 tsps of rum)
3 1/4 cups of flour
2 tsp baking powder
1/2 tsp salt
Glaze:
1 cup of powdered sugar
1 tsp of rum (or 1/2 tsp of rum extract)
2 or 3 TBS of eggnog
Directions:
Mix the butter and sugar until combined. Add the eggs, eggnog, and extract until well combined. Mix the flour, baking powder and salt in a bowl and add it to the butter mixture. Mix until all combined.
Bake at 350 degrees on parchment paper for 25 minutes. Remove from oven, cool and cute into 1/2 inch pieces. Return to baking pan and bake again at 350 for 10 minutes, turn over and bake for another 10 minutes. Remove and cool completely before glazing.
To make glaze just mix powdered sugar, rum and eggnog and mix until you get the consistency of elmers glue….it should run off your fork easily. Glaze the biscotti and let harden.
