First EVER Focaccia in my DIY Pizza Oven - Recipe, Make, Bake - Looked Terrible, Tasted GREAT !

Learn how to make Italian Focaccia with caramelised onion and home grown pink tomatoes, and then watch as I try to bake it in my wood fired pizza oven which I made myself.

Lets be honest - the oven was too hot and it crozzled a bit on the outside, but it was well cooked and actually tasted fantastic, so much so I barely got any by the time my wife and mother in law had chowed down on it.

Making a home made focaccia is pretty simple and the following focaccia recipe is pretty robust and flexible. Here are the Focaccia ingredients.

The bread mix is standard - about 1lb of Strong bread flour to 2 teaspoons instant yeast, 1.5 teaspoons sugar and 1.25 teaspoon salt. I added a sourdough starter as well for flavour (see my first pizza bake for this) and then used the dough hook in the food processor and added water until it came together and cleaned the edge of the bowl.

Then rest for a few '45 minute' shifts, adding oil and folding/stretching each time. This works the dough without knocking the bubbles out of it. You will see it gradually getting bigger so after a few hours its ready to flatten out (using fingertips to make dimples) then adding toppings, a bit of oil and in the oven.

12 minutes later here we go.

The Focaccia technique is actually the same as Ciabatta. The only difference is that Focaccia uses oil (olive oil) whilst the Ciabatta uses water.

Lessons? I should have put it in earlier before I had full fire (I was getting ready to put pizzas in there) or let it cook a little more slowly by the door.

Nonetheless the proof of the pudding is in the eating, and that was pretty good, and of course it will come out much better next time!
