Striploin & Ciabatta Cooked in a DIY Wood Fired Pizza Oven

The next cook in my DIY home made Wood fired pizza oven. Can I cook striploin steak and serve in home made ciabatta bread cooked in pizza oven?

First the bread. They recipe is pretty standard. To make homemade Ciabatta the Ciabatta recipe is 1kg (or about 1lb) of string bread flour, 1.5 teaspoons of dried yeast and 1.25 teaspoons of salt. No sugar needed due to the long proving time. The Ciabatta method is simple but a bit time consuming. Mix on your dough hook until combined and add enough water to make a wet mix - about the same weight as the four. Turn out and leave for 45 minutes at room temperature. Then do 8 folds -each way and each sideways, being gentle to NOT knock any air bubbles out. You are trying to stretch them, not crush them. At tis point I also folded in some cool, dry caramelised onions. The repeat 2 more times until it is elastic and risen - you will see at least 4 fold bigger.

Now it is time to cut and place on baking parchment (spoiler, I used butcher paper which stuck to the bread). Then its time to cook.

The oven shouldn't be too hot or the bread will burn (mine was on the point of that). Cooking should be about 10 minutes. And voila! Home made ciabatta cooked in a DIY Wood Fired Pizza Oven.

I made the grille out of a sheet of perforated stainless steel -much cheaper than anything else I saw. Move the coals to the front and you have a cooking plate as hot as any BBQ. Sizzle your steaks to your liking but remember its hot, so they will cook about 25% quicker!

Serve your smoked, BBQ striploin steaks sliced against the grain in your bread with a little salad and sauces to your liking. Delish!!!!
