DIRECTIONS

Melt ½ cup (113 g) of butter
Crush 9 Oz (250g) digestive cookies
Pour in the melted butter
Press down the cookie crumbs into the mold
Bake at a 350 °F oven for 5 to 10 min or until golden
1 cup (250ml) of heavy cream
2 cups(300g) of semi-sweet chocolate chips
Pour hot cream over and allow it to sit for 3-5 min
Stir to combine…
…until smooth & shiny
Pour the ganache into the pie crust
Let it cool at room temperature for 1 hour
Crush 10 to 12 large candy canes in the food processor
Cover the pie with the crushed candy canes
Refrigerate for 2-3 hrs.
Brush the rosemary and the raspberries with egg white
Then sprinkle with sugar
Brush off the excess
