Cheddar Polenta ~ Great Side Dish!
Polenta is a great side dish that goes with almost anything
Ingredients:
1 1/2 cup water
2 cups of milk
3 cloves of finely minced garlic
2 tsp of fresh thyme
2 tsp salt
1/2 tsp of pepper
1 cup of cornmeal (I used a fine grain)
4 TBS butter
1 cup of grated cheddar (or any cheese you like)
To a heavy bottom pot add the water, milk, garlic, thyme, salt and pepper and bring to a boil on hight heat. Once it’s boiling lower the heat and slowly add the cornmeal while whisking. When all the cornmeal has been added put it on a low heat and cook for 20 to 25 minute STIRRING OFTEN! Do not walk away!!
After the 20 minutes add the butter and stir until melted. Then add the cheese and stir until it’s all melted and incorporated.
Serve immediately and Enjoy! ♥
If you have any leftovers you can reheat them by adding more milk or water and stir while heating. You can also add the liquid stir and microwave.
