Persian Sabzi Polo ba Mahi (herb rice with fried fish) recipe for Nowruz
Hi there! happy Nowruz!
Essential ingrediensst:
. any fish you prefer
. 3 cups of Persian rice
. spices such as salt and black pepper
. fresh lemon juice
. vegetables: 100g coriander, 100g dill, 100g leek, 100g parsley, 100g fenugreek and some scallion
. olive oil and water
recipe for Sabzi Polo:
. soak the 3 cups of Persian rice in salty water for about 2 hours and meanwhile boil 5 cups of water mixed with 2-3 tbsp olive oil, then chop the vegetables very well!
. after 2 hours add the rice to the boiling water and then drain it semi-cooked!
. prepare the pot, add some vegetable or olive oil, and start adding the layers of drained rice and chopped vegetables.
. then mix 3 tbsp olive oil and 0.5 cup of water and add it to your rice.
. using a piece of fabric as a steamer, cook the Sabzi Polo for about 1.5 hours on low heat.
recipe for the Mahi or fish:
marinate the fish with 1.5 tsp salt, 1 tbsp black pepper, and 5-10 tbsp fresh lemon juice and let it rest for 1 hour.
. then just fry your fish and you're done!
