Persian Gheimeh (red stew) recipe with all the techniques you need to know

Essential ingredients
• 1.5cups of yellow split peas
• 500g lamb meat with extra fat
• Tomato paste
• Potatoes
• Dried limes
• Vegetable and olive oil
• Saffron extract
• Onion
• Spices such as salt, turmeric, black and red pepper powder, and dried lime powder
• Lavash bread for Tahding
• 3 cups of Persian rice

Recipe for the stew:
• Start by chopping 1 onion, then fry it for 10 mins and then add 1tbsp turmeric and 1 tbsp black pepper powder to it.
• Keep frying for 5 minutes and then add the meat.
• Fry the meat and the onion for 10 mins and then add the split peas.
• Fry these ingredients for about 15 mins and while they’re frying you should prepare the sauce!
• For the sauce start the recipe by frying 4 tbsp tomato paste with 1 tbsp black pepper powder, 1 tbsp cinnamon powder and 1 tsp red pepper powder.
• After about 5-6 mins of frying add 1 cup of water to the paste and stir-fry it till the water evaporates and then add 0.5 cup of rose water to it.
• Add the sauce to the frying ingredients and stir them well.
• Then add 3-4 cups of water to the stew, then when it starts to bubble, add 1 tbsp salt and 1 tbsp dried lime powder and cook it for about 5 hours on low heat.
• After 5 hours, soak 3-4 dried limes in water to get rid of the bitter taste of them.
• Add the limes to the stew and keep cooking for the last 2 hours and then you’re done!

Recipe for the fries:
• Peel and chop 3-4 potatoes and then soak them in 3 cups of icy water.
• Add 1 tbsp salt and 1 tbsp turmeric to the water and let it rest for 2 hours.
• Then after 2 hours, drain them and start frying them.
• Adding 2 tbsp saffron extract to the frying potatoes is a great way to enhance the color and smell of them!

Recipe for the rice:
• First, rinse 2.5 cups of your rice 2 or 3 times, then add 3 cups of water and 1 tbsp salt to it and let it rest for about 2 hours.
• In a bigger pot, bring 3-4 cups of water to a boil, and remember to add 1 tbsp olive or vegetarian oil to it.
• After 2 hours and when the oily water is boiling, add the rice that you soaked into the salty water to it and bring the rice to boil for about 15 mins or until the rice is semi-cooked.
• After that drain the rice, prepare the pot that you want to cook the rice in, add 3-4 tbsp vegetarian oil to that pot, then mix it with 2 tbsp saffron extract and place the lavash bread on top of them.
• then add the layers of the rice.
• Create a whole in the middle of the rice so that it will be cooked in a better way, then mix 1-2 tbsp olive oil with 10 tbsp water and add it to the rice.
• Use a piece of fabric as a steamer then cover the lid and cook your rice for about 1.5 hours on low heat.
