Kooie Tare (Persian pumpkin stew with walnuts and pomegranate) recipe

📌ingredients:
- 500g pumpkin
- 2 tbsp brown sugar
- 2 tbsp pomegranate paste
- 2 tbsp tomato paste
- 6 cloves of garlic
- 5 tbsp olive ooil
- 6 walnuts
- 1 tbsp salt, black pepper, and turmeric

📌preparation:
- cut the pumpkin and boil it for 1 hour on low heat with 1 cup of water.
👀do not peel it!
- grate the garlic and mash the walnuts.
- when the pumpkin is boiled enough, peel it and mix it well.
- fry the garlic with 5 tbsp olive oil for 2 ins.
- add the pumpkin mixture and stir and fry for 5 mins.
- add the spices, pastes, sugar, and walnuts and stir well.
- add 1 cup of water.
- cook for 4 hours on low heat and remember to stir every 30 mins.
👀remeber that Kooie Tare needs time to be cooked and the important part of cooking it is that you need to wait and stir and cook on low heat till the stew is thin enough and the water evaporates completely!
